In this heat, all you can do is swim


Scarlett and Beck have had swim lessons for the past two weeks. This video is from the second day of lessons (I think). She did great here, but got even better by the last day. Unfortunately, Clark came down with Hand, Foot and Mouth disease so I stayed home with him for most of the last week of lessons and didn't get any more videos. I was actually able to watch her the last day, but of course forgot my camera. We are so lucky that my mom found Miss Sarah for us and are also blessed that they got to take private lessons at my parents pool. I think it helped that they didn't have other kids in the water with them at the same time. Scarlett gets pretty easily distracted so it really worked to her benefit to have the pool all to herself. Thanks Mom!!

Visit with friends


Last week, my good friend from college, Stacy and her family came to San Antonio for a little vacation and some fun at Sea World. We were lucky enough to meet up with them at La Cantera for some food and play time at their little playground. Scarlett and Claire hit it off right away, and Britton and Clark loved playing and running around the playground. 

Stacy and I met when we were in Lubbock and worked together. She went to Tech and majored in Elementary Education like I did. After college, we went to Cancun together for a graduation trip and then she went home to Amarillo to begin teaching while I moved back here. We are good travel buddies. We've been to Vegas a couple of times, Dallas several times, Cancun, Austin...lots of fun trips with lots of great memories! (I have no idea why these scanned pictures are so small, but I'm getting so frustrated with it, so I give up!)

Stacy and I hadn't seen each other in years, but we picked up right where we left off. I have never seen her upset or down. She is so fun to be around and really can make anything fun! I really wish we lived closer...Stace...let's plan that weekend getaway SOON! It was so good to see you!!

Fun Food Friday

My sister in law Maegan has started Fun Food Friday where you share a recipe. I have been in a bit of a blog funk lately...mainly because how many pictures do you really want to see of the kids at the pool? Please don't answer that...it's honestly all I think I will be posting this summer so I'm going to pretend that the 10 or 2 people that read the blog will be fascinated with my two cuties in floaties.

I do actually have a post ready about my fun Tuesday night when I got to see my college friend Stacy and her family, but since I need Brody to help me scan a picture of us from our college days, (and before I post it let me remind you it was the early 90's and head to toe denim was actually "in")I'm having to wait a little longer.

So...here's my recipe for this Fun Food Friday. It's called Key Lime Pie and it's a Weight Watchers recipe. 

Key Lime Pie (makes 8 servings; 3 points per serving)
*1 box (0.3 oz) sugar free lime flavor gelatin
1/4 cup boiling water
2 containers (8oz each) key lime pie flavor light yogurt
1 container (8oz) frozen fat free whipped topping, thawed
1 prepared 9" reduced fat graham cracker pie crust (I can NEVER find the reduced fat, so I just buy the regular one)

1. In large heat resistant bowl, dissolve gelatin in boiling water. With wire whisk, stir in yogurt; with wooden spoon, fold in whipped topping.

2. Transfer mixture to prepared crust; refrigerate overnight, or at least 2 hours.

** You don't have to use key lime. As long as you get the same flavor of gelatin as yogurt, you can make any flavor. For the Fourth of July it would be fun to do a strawberry flavor with some blueberries sprinkled on top, or blueberry flavor with strawberries on top...limitless possibilities! :)
